There is not a day-maker quite like going through the Starbucks drive thru, asking if they have any ‘egg white bites’ left, them saying they do, and starting your day with those tasty little morsels. If you don’t know what I’m talking about – just go tomorrow. You can come back to this post and thank me after 🙂 The sad part about my egg white addiction is that I started leaving my house in the morning, just to drive to my local Starbucks to get them, and drive back. Not only did it set my entire day back with having to leave my house for no reason…but it also added up $$$!!

Something else that inspired my recreation of these is that I am a #badwifey and rarely wake up to make my hubby breakfast in the mornings…I know shame on me. I enjoy my slumber, (but really guys I take any chance to sleep in I can haha) and my husband is a little picky when it comes to eating. (Love you babe 😘 but it’s kinda true). He does love simple comfort food and something easy to reheat and grab on-the-go like this is something I know he will actually eat and enjoy. This recipe is perfect because you can make it ahead of time, and have breakfast for the next week! Whether it is just you, or you are prepping for your husband or family, it’ll last you at least a couple of days! My specific cupcake pan makes 12, and Al and I each eat 2 a day so it’ll last us 3 days! So worth it in my opinion for something that was seriously SO easy to make! I just cannot believe I didn’t make these sooner.

A couple things before I dive into the recipe:

There are tons of ways to recreate these tasty bites and also so many modifications you can make to it, so I will let you guys know exactly what I did THIS time, and also a few ways I’m gonna switch it up as I make them in the future! A couple things off the top of my head are:

-Adding meat (I would do a turkey sausage! Cook meat first then add it to the egg mixture before baking.)

-Doing JUST whole eggs or JUST egg whites (I did mostly egg whites, with some whole eggs)

-Switch up the cheeses (I did feta and am a HUGE feta lover. Do whatever cheese you love!)

Now onto the recipe! Which I am SO excited about because as I was typing this post this morning, Al tried the bites for the first time and said “babe…I give these a solid 10.” Coming from my picky eater…😱😍!!

-Add green onions. This would be tasty! I think I’ll do this next time!

-As I was prepping I thought I would put the egg mixture into the cupcake liners pictured, but decided to just use cooking spray and put the egg mixture directly into the pan which ended up working great!

-As you get down to the ingredients part you will notice that I used cottage cheese…yes I thought that was weird too. I actually have seen one of my favorite bloggers, Rachel Parcel, post about how she puts cottage cheese in her eggs everyday haha so when I was researching different ways to make egg white bites and saw a couple people mention that cottage cheese was the secret for helping with the texture and making them fluffy, I knew I had to use it in my recipe. I really think it made a huge difference!! But if you make a recipe without it you’ll have to let me know how it turns out!

 

INGREDIENTS:

3 WHOLE EGGS & 4 EGG WHITES
1 RED BELL PEPPER (YOU WILL CHOP & ROAST)
1/4 CUP OF FETA CHEESE
1/2 CUP OF LOW FAT COTTAGE CHEESE
SMALL HANDFUL OF CHOPPED SPINACH
SALT & PEPPER
COOKING SPRAY

 

DIRECTIONS:

PREHEAT OVEN TO 500 DEGREES FOR BELL PEPPER. DESEED AND CHOP BELL PEPPER INTO DICES. PUT ON BAKING SHEET AND BAKE UNTIL WILTED. (THIS CAN HAPPEN FAST SO WATCH IT! TOOK LESS THAN 15 MINUTES FOR ME).
REMOVE PEPPER FROM OVEN AND DECREASE OVEN TEMPERATURE TO 350 DEGREES.
CHOP YOUR SPINACH INTO SMALL PIECES.
IN MEDIUM SIZE MIXING BOWL, WHISK TOGETHER EGGS, EGG WHITES, COTTAGE CHEESE, FETA CHEESE, AND SPINACH UNTIL WELL MIXED. ADD ROASTED BELL PEPPERS, SALT & PEPPER TO TASTE, AND MIX TOGETHER.
SPRAY CUPCAKE PAN WITH COOKING SPRAY. THIS IS IMPORTANT AS YOU WANT THE BITES TO COME OUT IN WHOLE AND NOT GET STUCK, EVEN IF YOUR PAN IS ‘NON-STICK’ I WOULD STILL DO THIS.
POOR EGG MIXTURE INTO EACH CUP, ONLY ABOUT HALF WAY. I EVEN DID A LITTLE LESS THAN HALF WAY TO MAKE SURE I HAD ENOUGH MIXTURE FOR EACH CUP, THEN WENT BACK WITH THE LEFTOVERS.
BAKE IN OVEN 15-20 MINUTES OR UNTIL EDGES START TO BROWN A LITTLE AND EGG APPEARS TO BE COMPLETELY COOKED THROUGH. WITH MY OVEN I ENDED UP COOKING A LITTLE LONGER AND WATCHING THEM UNTIL THEY APPEARED TO BE DONE.
REMOVE AND COOL.
SERVE IMMEDIATELY OR PUT INTO AIRTIGHT CONTAINER AND STORE IN FRIDGE.
TO REHEAT, SIMPLY MICROWAVE FOR 1 MINUTE!

 

That’s it! They really were so simple and the fact they they were HUBBY APPROVED makes me know this is going to be a weekly thing I do to make sure we eat breakfast!

      I eat 2 for a serving!! My hubby usually has 2-3 depending on how hungry he is! And yes in that case it keeps us full til lunch time 🙂
